05/8Creamy vanilla ice cream
This vanilla ice cream is super creamy and rich in taste. These particular proportions of milk and cream to egg yolk will give you a thick but not sticky ice cream that feels decadent but not heavy
Ingredients
2 cups heavy cream
1 cup whole milk
⅔ cup sugar
⅛ teaspoon fine sea salt
6 large egg yolks
Your choice of flavoring
Method
In a small pot, simmer heavy cream, milk, sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk the yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
06/8Nutella ice cream
A creamy frozen chocolate treat you can whip up in seconds, made with items you may already have in your kitchen pantry. No blender or ice cream machine required.
Ingredients
2 cups of yogurt of your choice (500g)
2/3 cup chocolate Nutella (160g)
pure vanilla extract (8g)
1/4 tsp salt
1/4 cup cocoa powder
1/3 cup sugar or sweetener of choice
1 cup low fat milk
chocolate chips (optional)
Method
Sep 1 : Blend all ingredients except optional chips, or stir extremely well by hand until completely smooth.
Step 2: Stir in chips if desired
Step 3: Freeze half an hour in an airtight container for a firmer texture.
Step 4: Due to the lack of preservatives, any Nutella frozen yogurt not eaten within a day will need to be thawed for about a 1/2 hour prior to scooping.
07/8Coconut ice cream
Ingredients
2 cup coconut milk
1/2 cup additional coconut milk or milk of choice
1/4 cup sweetener of choice, such as sugar or pure maple syrup
1 tbsp sweetener of choice
1/8 tsp salt
1 1/2 tsp pure vanilla extract
optional ingredients for desired flavor
Method
Step 1: Stir the coconut milk, sweetener, vanilla extract, salt in a bowl and mix until smooth. Add the additional flavour like coffee or peanut butter
Step 2: Freeze the mixture in ice cube trays, then blend the frozen ice cubes in a high-speed blender
Step 3: freeze a few hours for a firmer texture. While homemade ice cream is best the day it is made, you can technically keep it frozen for up to a few weeks and thaw before eating.
